Lamb Burger with halloumi and watercress-pesto

Main course, Serves 4


Make the pesto: combine watercress, cheese, oil, garlic and nuts in a blender and blend till pesto. Leave some cress aside for garnish. Season with salt and pepper. Cut tomatoes and halloumi in slices. Fry the burgers, grill the cheese and toast the buns. Top with salad, cheese, burgers and tomatoes. Top with pesto and extra watercress.


  • 1 bunch of watercress 100 g
  • Extra virgin olive oil
  • 1 tbsp. grated Parmesan cheese
  • 1 tbsp. pine nuts
  • 1 garlic glove
  • salt and pepper
  • 2 tomatoes
  • 1 lettuce
  • 4 buns or sandwich bread
