Deep fried onions with sweet potato fries on the side

Side dish, 4 persons

Procedure

Heat frying oil to 180 ºC and the oven to 200 ºC. Make a thick, runny batter by mixing just enough milk trough the flour as needed. Add some salt and pepper and set aside. Wash and dry the potatoes (peeling is not necessary). Cut them into French fries. Put them in a plastic bag, add the starch and salt and shake them, or put everything in a large bowl and mix until well caoted. Add the oil and mix until completely covered. Divide the potatoes on a large baking tray in a single layer. Roast 15 minutes. Turn them over with a spatula and roast for another 10 minutes until the chips are soft on the inside and crispy on the outside. Cut the onions into thick rings. Put them through the batter (in small batches) and let them sink into the fryer one by one. Bake them nicely golden brown and drain on kitchen paper.

Serve the onions and fries with burgers and piccalilli, chutney, ketchup, mayonnaise, pickles, and for instance organic crisps.

  • 2 tbsp of potato starch
  • 4 tbsp sunflour oil
  • salt flakes (Maldon)
