USA Burger with chanterelles

white bean hummus, lamb’s lettuce and truffle mayonnaise
Main course, 4 persons

Procedure

Drain the beans and blend them to a cream with garlic and parsley in a food processor. Season to taste with salt, pepper and lemon juice and mix in some olive oil. Fry the chanterelles for a few minutes on high heat in oil and season with salt, pepper and finely chopped thyme. Cut the buns along the length and toast them for a few minutes in a hot frying pan. Divide the hummus generously on the bottom of the buns, then add lamb’s lettuce. Cook or grill the burgers golden brown according to instructions on the package and put them on the lettuce. Spoon the mushrooms and truffle mayonnaise on top of the burgers.

  • 1 can white beans (160 g)
  • 1 garlic glove
  • 4 sprigs parsley
  • 1 tbsp lemon juice
  • extra virgin olive oil + olive oil
  • salt and pepper
  • 200 g fresh chanterelles (brushed clean)
  • 4 Frozen butcher USA burgers
  • 2 sprigs thyme
  • 50 g lamb’s lettuce
  • 4 firm burger buns
  • 2 tbsp truffle mayonnaise
